Makes: 1 drink

2 thick slices cucumber 6 fresh mint or basil leaves 1 ounce fresh lime juice 1 tablespoon agave syrup 1 1⁄2 ounces white rum, optional 4 ounces chilled Vichy Catalan Water Muddle the cucumber, mint and lime juice in a cocktail shaker. Add agave and rum if using, plus ice, and shake until well chilled. Strain into a tall glass over fresh ice, and top with sparkling mineral water, such as Vichy. Garnish with a fresh cucumber slice, lime wedge and herb sprig, if you like.
