Lemon Pepper Yogurt Marinade
Add a refreshing tangy flavor to your chicken with this marinade! The lemon pepper seasoning used in this recipe is a mix that contains salt. If you use one that is salt-free, plan to add about a half teaspoon of fine sea salt to the marinade. Or you can season the chicken to taste after it is cooked.
Yield: about 1⁄2 cup
INGREDIENTS
• 1⁄3 cup plain Greek yogurt
• 2 tablespoons olive oil or cooking oil
• 1 tablespoon yellow onion, chopped
• 1 tablespoon fresh parsley, chopped
• 1 teaspoon lemon pepper seasoning
PREPARATION
Combine all ingredients in single serve blender cup or small food processor. Puree 20 to 30 seconds, until all ingredients are minced and blended. Place chicken in a shallow dish. Rub the thick marinade over the chicken, then pour any remaining over the chicken. Cover and refrigerate at least one hour.
