Indian-spiced Coconut Rub
This rub combines the sweetness of coconut with richly spiced garam masala. If you’d like to give the rub some pleasant heat add a little ground cayenne pepper to the mix.
Yield: about 6 tablespoons
INGREDIENTS
• 3 tablespoons sweetened coconut flakes
• 1 tablespoon garam masala
• 1 teaspoon light brown sugar
• 1 teaspoon fine sea salt
• 1⁄2 teaspoon garlic powder
PREPARATION
Combine all ingredients in a spice grinder or single serve blender. Pulse in 5-second intervals about 5 times, until all ingredients are finely minced. Rub over chicken.
