Pineapple Ginger & Cilantro Marinade
This summer favorite gives chicken a hint of the tropics while taking advantage of spring and summer chives and cilantro.
Yield: about 1 cup
INGREDIENTS
• 6 ounces pineapple juice
• 2 tablespoons fresh chives, chopped
• 2 tablespoons fresh cilantro, chopped
• 1 tablespoon olive oil or cooking oil
• 2 cloves garlic, roughly chopped
• 1⁄2-inch piece ginger root, peeled and chopped
• 1 teaspoon fine sea salt
PREPARATION
Combine all ingredients in single serve blender cup or small food processor. Puree 20 to 30 seconds, until all ingredients are minced and blended. Place chicken in a shallow dish. Pour marinade over the chicken. Cover and refrigerate at least one hour.
