Pineapple Ginger & Cilantro Marinade

This summer favorite gives chicken a hint of the tropics while taking advantage of spring and summer chives and cilantro.

Yield: about 1 cup

INGREDIENT­S

• 6 ounces pineapple juice

• 2 tablespoon­s fresh chives, chopped

• 2 tablespoon­s fresh cilantro, chopped

• 1 tablespoon olive oil or cooking oil

• 2 cloves garlic, roughly chopped

• 1⁄2-inch piece ginger root, peeled and chopped

• 1 teaspoon fine sea salt

PREPARATIO­N

Combine all ingredient­s in single serve blender cup or small food processor. Puree 20 to 30 seconds, until all ingredient­s are minced and blended. Place chicken in a shallow dish. Pour marinade over the chicken. Cover and refrigerat­e at least one hour.
