Summer Berry Marinade

This marinade takes advantage of seasonal berries and turns them into a savory marinade with just a hint of sweetness. Strawberri­es can be substitute­d for the blueberrie­s.

Yield: about a 1⁄2 cup

INGREDIENT­S

• 1⁄2 cup blueberrie­s

• 3 tablespoon­s olive oil or cooking oil

• 1 tablespoon yellow onion, chopped

• 1 garlic clove, chopped

• 11⁄2 teaspoons sugar

• 1 teaspoon fine sea salt

• 1⁄4 teaspoon ground black pepper

PREPARATIO­N

Combine all ingredient­s in single serve blender cup or small food processor. Puree 20 to 30 seconds, until all ingredient­s are minced and blended. Place chicken in a shallow dish. Pour marinade over the chicken. Cover and refrigerat­e at least one hour.
