Summer Berry Marinade
This marinade takes advantage of seasonal berries and turns them into a savory marinade with just a hint of sweetness. Strawberries can be substituted for the blueberries.
Yield: about a 1⁄2 cup
INGREDIENTS
• 1⁄2 cup blueberries
• 3 tablespoons olive oil or cooking oil
• 1 tablespoon yellow onion, chopped
• 1 garlic clove, chopped
• 11⁄2 teaspoons sugar
• 1 teaspoon fine sea salt
• 1⁄4 teaspoon ground black pepper
PREPARATION
Combine all ingredients in single serve blender cup or small food processor. Puree 20 to 30 seconds, until all ingredients are minced and blended. Place chicken in a shallow dish. Pour marinade over the chicken. Cover and refrigerate at least one hour.
