Garden Herb Rub
Grab your favorite herbs from the garden and make this rub for chicken! It can be modified to your preferences by substituting other favorites like basil or cilantro.
Yield: about 1⁄4 cup
INGREDIENTS
• 2 tablespoons fresh chives, chopped
• 2 tablespoons fresh oregano leaves
• 2 tablespoons fresh parsley, chopped
• 8 small sage leaves
• leaves from a 4-inch sprig rosemary
• 11⁄2 teaspoons fine sea salt
• 1 teaspoon garlic powder
• 1⁄2 teaspoon ground black pepper
• 1⁄2 teaspoon thyme leaves
• 2 tablespoons olive oil or cooking oil
PREPARATION
Combine all ingredients except the oil in a spice grinder or single serve blender. Pulse in 5-second intervals about 5 times, until all ingredients are finely minced.
Transfer to a small bowl and stir in the oil. Spread the rub over the chicken.
