Ap­ple Crum­ble Bars

These ver­sa­tile Paleo crum­ble bars can work equally well for break­fast, a snack or even dessert. They’re quite crumbly, so we love serv­ing them in a bowl with yo­gurt or ice cream. To add a spicy di­men­sion, try us­ing ap­ple pie spice in place of the cin­na­mon.

CRUST

2 cups blanched al­mond flour

2 tbsp co­conut oil

2 tsp pure vanilla ex­tract

¼ tsp sea salt

FILL­ING

1 tbsp co­conut oil

4 firm ap­ples (about

7.5 oz each), such as Gala, peeled, cored, cut into 1/8-inch-thick slices

2 tbsp pure maple syrup

2 tsp ground cin­na­mon (TRY: Sim­ply Or­ganic Cey­lon Cin­na­mon)

Pinch sea salt

TOP­PING

5 oz un­salted wal­nuts (about 11/2 cups)

¾ cup blanched al­mond flour

¼ cup pure maple syrup

1 tbsp co­conut oil

1 tsp ground cin­na­mon

¼ tsp sea salt
