with Cumin Black Beans
Layered with fragrant beans and scrambled eggs, these wraps can be topped with your favorite additions like avocado, cheese or sriracha.
1 tbsp extra-virgin olive oil
1 yellow onion, chopped
1 15-oz BPA-free can black beans, drained and rinsed 2 tsp each ground cumin and paprika 1 tsp garlic powder 1/4 tsp each sea salt and ground black pepper
SERVING 4 large eggs, beaten sea salt and ground black pepper, to taste
4 6-inch whole-grain tortillas Optional: mixed greens, shredded cheese, sriracha, sliced avocado, pickled onions
1. Prepare beans: In a medium skillet on medium, heat oil. Add onion and cook until softened, about 5 minutes. Add beans, cumin, paprika, garlic powder, salt and pepper; cook until fragrant and beans are heated through. Transfer mixture to a bowl.
2. Wipe out skillet and mist with cooking spray. Add eggs and season with salt and pepper. Scramble to desired doneness.
3. To tortillas, add beans, eggs and desired toppings.
