Working for years alongside celebrity chefs like Ina Garten, Mario Batali and Gwyneth Paltrow, cookbook author Julia Turshen picked up plenty of tips and shortcuts to amp up the flavor of dishes without much effort. Her conclusion? “Cooking doesn’t have to be complicate­d to be satisfying, or over the top to be impressive.” And to prove it, Julia is sharing her best recipes in her new cookbook, Small Victories. 1. In blender or food processor, puree first 6 ingredient­s until smooth. Add Parmesan to processor; pulse a few times just until cheese is incorporat­ed. Season to taste with salt and pepper.

2. In large bowl, combine lettuce with nearly all the dressing. Toss well, making sure every piece of lettuce is coated.

3. Divide lettuce evenly among 4 plates. Divide tomatoes, hard-boiled eggs and croutons evenly among salads; drizzle the last bit of dressing over the salads. Serve immediatel­y.
