1. In blender or food processor, puree first 6 ingredients until smooth. Add Parmesan to processor; pulse a few times just until cheese is incorporated. Season to taste with salt and pepper.
2. In large bowl, combine lettuce with nearly all the dressing. Toss well, making sure every piece of lettuce is coated.
3. Divide lettuce evenly among 4 plates. Divide tomatoes, hard-boiled eggs and croutons evenly among salads; drizzle the last bit of dressing over the salads. Serve immediately.
