LAMB GYRO NACHOS

1 lb. ground lamb 1 ⁄4 tsp. salt 1⁄2 tsp. pepper 1 small onion, peeled and diced 1 clove garlic, peeled and minced 1⁄2 tsp. cumin 1⁄2 tsp. dried oregano flakes 1 ⁄4 tsp. dried rosemary 4 tbsp. olive oil 1 bag (10 oz.) pita chips 1 cup shredded jack cheese 1 cup crumbled feta cheese 1 cup chopped cucumber 1 cup chopped tomato 1 cup chopped kalamata olives

Tzatziki sauce, for serving

1. Place first 8 ingredient­s in a bowl. Cover; marinate in the fridge 1 hr. or overnight.

2. Heat oil in a pan over medium-high. Add lamb; cook 5 min. Turn heat to low. Remove all but a few tbsp. of fat. Simmer 5 min.

3. Heat broiler to high with a rack 4˝ from heat. Arrange chips on a sheet pan. Top with jack cheese, lamb and feta. Broil 3 to 5 min.

4. Top with cucumber, tomato and olives. Drizzle with tzatziki. Serve hot.
