2 oz. (60 ml) Aperol (or similar bitter orange amaro) 3 oz. (90 ml) prosecco, chilled 2 oz. (60 ml) soda water, chilled Orange half-wheel,

1. Fill a tall wineglass three-quarters full with ice. Pour the Aperol and chilled prosecco over the ice and top with the soda water. Gently stir to combine.
2. To garnish the drink, tuck the orange half-wheel between the ice and the side of the glass and add the skewered olives, if using.
For a zero-proof drink, fill a wineglass threequarters full with ice. Pour 2 oz. (60 ml) Crodino (a bittersweet Italian non-alcoholic aperitif), 2 oz. (60 ml) Sanpellegrino Aranciata or Aranciata Rossa orange soda, and 1 to 2 oz. (30 to 60 ml) soda water over the ice. Gently stir to combine and garnish as directed with an orange half-wheel and skewered green olives, if desired.
