GINGER’S ISLAND
Serves 1
2 oz. (60 ml) pineapple juice, chilled 1 oz. (30 ml) amber rum 1⁄2 oz. (15 ml) fresh lime juice 1⁄2 oz. (15 ml) fresh orange juice 1 ⁄4 tsp. grated fresh ginger 2 oz. (60 ml) sparkling rosé or prosecco, chilled 2 oz. (60 ml) ginger beer, preferably Q Mixers 1⁄2 oz. (15 ml) grenadine
Dash of Angostura bitters
Skewer of pineapple and maraschino cherries, for garnish
1. Fill a large wineglass three-quarters full with ice. Pour in pineapple juice, rum, lime juice and orange juice. Add ginger and stir. Add sparkling rosé and top with ginger beer. Add grenadine; let it sink to the bottom.
2. Add the bitters and garnish with the fruit skewer.
*Delicious variation:
For an almost zeroproof drink, omit the rum and sparkling wine and double the ginger beer.
