If you’re a fan of Greek tzatziki, you’ll love this ver­sion that gets nice briny fla­vor from feta cheese. Fresh mint rounds out the fla­vors and soft­ens the gar­lic. Try it on lamb, chicken, or sal­mon. Smash 1 gar­lic clove on a cut­ting board with the broad side of a chef’s knife. Sprin­kle with 1/8 tsp. kosher salt; rub salt into gar­lic with the knife, form­ing a paste. Trans­fer gar­lic to a small bowl; add 1 cup plain whole-milk Greek yo­gurt, 1 oz. crum­bled feta cheese (about 1/4 cup), 4 tsp. chopped fresh mint, 4 tsp. fresh lemon juice, 1 Tbsp. chopped fresh dill, 1 Tbsp. water, and 3/8 tsp. kosher salt. Stir to com­bine.
