Preheat your oven to 425 degrees. Line a baking sheet with foil.

In a bowl, drizzle the potatoes and Broccolini with 2 tablespoon­s of olive oil, season with salt and pepper, and pour them onto the prepared baking sheet in one even layer. Pop it in the oven to roast for 15 minutes.

Meanwhile, top the salmon with the remaining 2 tablespoon­s of olive oil and season with salt and pepper. After the veggies have cooked for 15 minutes, add the salmon to the same baking sheet and roast 5 to 7 minutes more.

In a medium bowl, combine the lemon juice, mustard, olive oil, dill, and garlic. Season with salt and pepper, and set aside.

Once the salmon and veggies are done, take the pan out, turn the oven to broil, and brush the salmon and Broccolini with your dressing. Broil for 2 to 3 minutes for crispy perfection.
