Vanilla Ice Cream

Serves 8

1 cup milk

1 vanilla bean, halved lengthwise 1 egg

2 egg yolks

1 cup sugar

2 cups cream

1. Put milk and vanilla in a saucepan. Heat the milk, but not to boiling.

2. Remove from heat and cool.

3. Place egg, egg yolks and sugar in the bowl of an electric mixer, and mix until light and creamy.

4. Reduce the speed and pour in the milk and cream.

5. Remove the vanilla pod.

6. Cool the mixture and freeze in an ice cream maker.
