Sticky Dates With Lemon Feta and Walnuts

These canapés are refreshing, zesty and perfect with cocktails. Put the finished dates in the freezer for 5 minutes before serving. This somehow intensifie­s their honeyed sweetness. For meat-lovers or those with nut allergies, chorizo is a great substitute for the walnuts. 200 g (7 oz.) Greek feta cheese

Grated zest of 1 unwaxed lemon

Freshly squeezed juice of ½ lemon 20 Medjool dates, halved and stoned

100 g (3½ oz.) walnut halves or diced chorizo sausage

Sea salt and freshly ground black pepper Fresh mint leaves Cut the feta into 40 little blocks or mash it, as preferred. Put into a bowl with the lemon zest and juice and add salt to taste. Let this mixture stand for 30 minutes, turning it occasional­ly. Place a block or a small amount of mashed feta at one end of each date half and then add a walnut half to overlap the cheese. Grind a little black pepper over the top and finish with a mint leaf.
