The Bee’s Knees

MAKES TWO DRINKS, EACH 50 ML (2 OZ.)

The sweetness of this Prohibitio­n-Era cocktail has found its match in tangy blue cheese. 25 ml (1 oz.) freshly squeezed lemon juice

20 ml (¾ oz.) honey syrup (see below for recipe) 50 ml (2 oz.) London dry gin, preferably Beefeater Ice cubes

2 mini coupe or martini glasses

Honey Syrup Recipe

140 g (½ cup) runny acacia honey 40 ml (1/6 cup) hot water First, make the honey syrup: Combine the honey and hot water in a heatproof bowl and stir until completely mixed. Half-fill a cocktail shaker with ice and add the lemon juice, honey syrup and gin. Shake vigorously for 7 seconds until chilled and strain into a coupe glass. Serve immediatel­y.
