SPICED GROUND CHERRY COM­POTE

4 cups fresh ground cher­ries, husked and washed

Zest of ½ a lemon

Juice of 1 lemon 1⁄8 tsp. nut­meg

1 cup sugar

1 vanilla bean

Com­bine ground cher­ries, lemon zest and juice, nut­meg, and sugar in a heavy saucepan. Split the vanilla bean and use the point of a spoon to scrape the seeds from the pod, then stir the seeds to­gether with the ground cherry mix­ture.

Bring to a boil over medium-high heat, stir­ring fre­quently, then re­duce heat and sim­mer 30 min­utes. Pour into ster­il­ized jars and re­frig­er­ate. Makes ap­prox­i­mately 3 cups.
