Com­bine 3/4 cup mo­lasses,

1/4 cup ap­ple cider vine­gar, and 1 rose­mary sprig in a small saucepan. Cook over medium heat un­til re­duced to 2/3 cup, 12 to 15 min­utes. Whisk in 4 ta­ble­spoons cut-up un­salted but­ter and

1/4 cup bour­bon; con­tinue to cook un­til thick­ened, 1 to 2 min­utes. Sea­son with kosher salt and black pep­per. Makes 1 cup.
