Bourbon-Molasses Glaze
Combine 3/4 cup molasses,
1/4 cup apple cider vinegar, and 1 rosemary sprig in a small saucepan. Cook over medium heat until reduced to 2/3 cup, 12 to 15 minutes. Whisk in 4 tablespoons cut-up unsalted butter and
1/4 cup bourbon; continue to cook until thickened, 1 to 2 minutes. Season with kosher salt and black pepper. Makes 1 cup.
