Herbed Cheeseball
WORKING TIME 25 minutes TOTAL TIME 2 hours (including chilling) MAKES 12 to 16 servings 8 ounces goat cheese, at room temperature
8 ounces cream cheese, at room temperature
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh chives
1 tablespoon fresh thyme leaves
1 tablespoon finely grated lemon zest
Kosher salt and freshly ground black pepper 1/2 cup toasted pine nuts
Sliced baguette, for serving
1. Beat goat cheese, cream cheese, parsley, chives, thyme, and lemon zest with an electric mixer on medium speed until combined, about 1 minute. Season with salt and pepper. Chill until slightly firm, about 30 minutes.
2. Place pine nuts in a shallow dish. Roll cheese mixture, with slightly wet hands, into a ball.
Roll cheeseball in pine nuts to fully coat. Chill until completely firm, 1 to 2 hours. Serve with bread alongside.
