Smoked Turkey, Gouda and Apple Grilled Cheese

This sweet and smoky grilled cheese from Paige Rhodes of My Modern Cookery pairs perfectly with a cup of soup or a few kettle chips any time of the year.

INGREDIENT­S 2 tablespoon­s butter 4 slices wheat sourdough bread 4 slices deli smoked turkey breast 4 to 6 ounces smoked Gouda ½ of a Honeycrisp apple, sliced thinly Handful of baby kale

INSTRUCTIO­NS

1. Melt butter in a large skillet over medium heat.

2. While the butter is melting, divide half of the cheese between two slices of bread and layer two slices of smoked turkey breast, half of the apple slices, and kale in the middle. Repeat to assemble the second sandwich.

3. Grill each sandwich on both sides until all the cheese is melted. Serve immediatel­y.
