Apple Turkey Potpie
Serves 6
Potpies are a quintessential comfort food. Give this one a flavor makeover by mixing in apples and raisins to act as a sweet surprise for this savory dish.
INGREDIENTS ¼ cup chopped onion 1 tablespoon butter 2 (10.75-ounce) cans condensed cream of chicken soup 3 cups cooked, cubed turkey 1 large unpeeled tart apple, cored and cubed 1⁄3 cup golden raisins 1 teaspoon lemon juice ¼ teaspoon nutmeg Pastry for one 9" piecrust
INSTRUCTIONS
1. Preheat oven to 425°F.
2. In a large saucepan, sauté onion in butter until tender. Add soup, turkey, apple, raisins, lemon juice and nutmeg; mix well. Spoon into an ungreased 11" x 7" x 2" baking dish.
3. On a lightly floured surface, roll the pastry to fit the top of the dish. Place it over the filling; flute the edges and cut slits in the top.
4. Bake for 25 to 30 minutes or until the crust is golden and the filling is bubbly.
