A mandoline slicer could be used after the potatoes are peeled to make the slices uniform in thickness, but it’s not necessary.

This recipe can be made one day in advance. Place the potatoes and cream sauce in the dish, cover tightly with foil and refrigerat­e. The next day, set the dish on the counter to lose its chill while the oven preheats. An extra 10 minutes of baking time is recommende­d, since the dish will be colder than room temperatur­e.
