Jack-o’-Lantern Empanadas

Your trick-or-treaters will love these spooktacul­ar pockets with silly grins. The savory filling is perfectly spiced, and the refrigerat­ed pie crust makes the prep easy. MATTHEW HASS ELLISON BAY, WI

PREP: 45 MIN. • BAKE: 15 MIN. MAKES: 21/2 DOZEN

1 Tbsp. canola oil 1/2 cup frozen corn 1/4 cup finely chopped onion 1/4 cup finely chopped sweet red pepper

2 garlic cloves, minced 1 can (15 oz.) pumpkin 1/2 cup black beans, rinsed and drained 2 tsp. chili powder 3/4 tsp. salt 3/4 tsp. ground cumin 1/2 tsp. dried oregano 2 pkg. (14.1 oz. each ) refrigerat­ed pie crust 1 large egg

1 Tbsp. water

1. Preheat oven to 425°. In a skillet, heat oil over medium heat. Add corn, onion and pepper; cook until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Stir in pumpkin, beans and seasonings; heat through. Cool slightly.

2. On a lightly floured surface, unroll pie crust. Cut 60 pumpkins with a 3-in. floured pumpkinsha­ped or round cookie cutter, rerolling crust as necessary. Place half of the pumpkin cutouts 2 in. apart on parchment-lined baking sheets; top each with about 1 Tbsp. pumpkin mixture. Using a knife, cut jack-o’-lantern faces or slits out of the remaining cutouts.

Place over top of the pumpkin mixture; press edges to seal.

3. In a small bowl, whisk egg and water; brush over empanadas. Bake until golden brown, 12-15 minutes. Remove from pan to wire racks.

Jute place mat, sized to fit inside wreath form Grapevine wreath

Wood slices, various sizes 2 canning jar rings

2 metal washers

Small craft feather picks Bark pieces

Hot glue gun

DIRECTIONS

1 Hot-glue jute place mat on backside of grapevine wreath. 2 Hot-glue 2 large wood slices at top of wreath for eyes. Add detail in layers by gluing on canning rings, washers and then smaller wood slices. 3 Hot-glue craft feather picks for eyebrows. Make wings by layering and gluing pieces of bark and any additional craft picks.
