We don’t make ad­junct de­ci­sions for our bar­rel-aged stock un­til the beer is fin­ished ag­ing. Some other brew­ers know what they’re go­ing to do be­fore they start, but we take the ap­proach of see­ing what ad­juncts would be a great com­ple­ment once the beer is ready. We’ve be­gun to iden­tify vanilla-for­ward bar­rels ear­lier in the process, say 6 to 8 months in, so we can add vanilla ear­lier in the process and get more ex­trac­tion and in­ten­sity from it. Some ad­junct in­gre­di­ents can show signs of over ex­trac­tion if you add them too early, but we’ve never en­coun­tered that with vanilla.
