General cooking time/temperatur­e guide for burgers at medium-high heat: medium-rare (3 minutes per side, 125-130 degrees F); medium (4 minutes per side, 135-140 degrees F); welldone (5 minutes per side, 160 degrees F or higher). Most people cook burgers to their preferred doneness; the US Department of Agricultur­e recommends a minimum internal temperatur­e of 160 degrees F or higher as a precaution, to kill any harmful bacteria in the meat. —LMC
