Cook’s Notes: Whichever dressing you use, dress salad very lightly, immediately before serving. Arugula wilts quickly if overdressed. If using pomegranate seeds, peel the pomegranate in a bowl of water. Break into quarters, and the seeds will easily separate from the membranes.
