A spe­cial prod­uct of Spain, Mar­cona al­monds are rounder and sweeter than reg­u­lar al­monds. They can be found in spe­cialty gro­cery stores.

6 1/2 1/2 Tbsp. ex­tra-vir­gin olive oil Tbsp. fresh or­ange juice Tbsp. sherry vine­gar Tbsp. minced shal­lots tsp. Di­jon mus­tard

Salt and back pep­per to taste

cups mixed salad greens or spring mix cup chopped fresh pars­ley cup blanched Mar­cona al­monds, toasted and chopped

Whisk to­gether oil, or­ange juice, vine­gar, shal­lots, and Di­jon for the vinai­grette; sea­son with salt and pep­per.

Toss salad greens, pars­ley, and al­monds with vinai­grette.
