Grilled Broccoli & Red Onion Hoagies

There are many beliefs about where the name “hoagie” came from. One theory is that it was a sandwich so big that “you had to be a hog to eat it.”

2 1/2 cups broccoli florets, tossed with olive oil medium red onion, cut into 1/2- inch-thick slices, and brushed with olive oil

Salt and black pepper to taste whole-wheat hoagie rolls, split cup each mayonnaise and Dijon mustard cups grated sharp Cheddar cup sliced banana pepper rings

Preheat grill to medium-high. Brush grill grate with oil.

Grill broccoli and onion, covered, until slightly charred, 3 minutes per side; transfer to a bowl and season with salt and pepper.

Brush rolls with mayonnaise and Dijon, sprinkle on Cheddar, then grill, cheese sides up, until cheese melts, 1–2 minutes.

Divide broccoli, onion, and pepper rings among rolls and serve.
