Grilled Zucchini Roll Ups

Zucchini vary in size, so you may need to trim the slices to yield the correct proportion­s.

1 3 10 cup finely crumbled feta cup cream cheese, softened Tbsp. mayonnaise Tbsp. each minced fresh thyme and oregano Tbsp. fresh lemon juice Tbsp. olive oil, divided Salt and black pepper to taste strips zucchini (8×2-inches and 1/4- inch thick) Lemon zest and fresh thyme

Preheat grill to medium-high.

Combine feta, cream cheese, mayonnaise, thyme, oregano, lemon juice, and 1 Tbsp. oil for the filling; season with salt and pepper.

Coat zucchini slices with remaining 2 Tbsp. oil; season with salt. Grill zucchini, uncovered, until tender, about 2 minutes per side; cool.

Pat zucchini dry and spread 1 tsp. filling evenly on each slice, then roll up and top with zest and thyme.
