Spicy Broccolini Orzo

Can’t find broccolini? Broccoli florets work just fine.

SWEAT:

1/4 1 3 1/4 oz. orzo pasta (11/ 3 cups) bunches broccolini (1 lb.), trimmed and chopped into bite-sized pieces cup sliced fresh garlic tsp. red pepper flakes Tbsp. olive oil cup red wine vinegar Salt to taste

Cook orzo in a pot of boiling salted water according to package directions, adding broccolini in the last 3 minutes of cooking; drain in a fine-mesh sieve, plunge sieve into an ice water bath, then drain again. Sweat garlic and pepper flakes in oil in a saucepan over mediumlow heat until edges of garlic just begin to get golden, 3 minutes; transfer to a bowl. Stir vinegar into garlic mixture then toss with orzo and broccolini; season with salt.
