Pear-Vanilla Compote
A splash of pear brandy or nectar enhances the overall pear flavor.

Tbsp. unsalted butter pears (such as Bartlett), peeled, halved, cored, and diced cup pear brandy or pear nectar tsp. fresh lemon juice Tbsp. light brown sugar tsp. each ground cinnamon and ground ginger Pinch of salt tsp. vanilla bean paste or pure vanilla extract
Melt butter in a saucepan over medium-low. Stir in pears, brandy, lemon juice, brown sugar, cinnamon, ginger, and salt. Cook, stirring occasionally, until pears are fork-tender, 15–20 minutes. Stir in vanilla bean paste. Pulse compote using a handheld blender or food processor to desired consistency. Let compote cool, then transfer to a container and refrigerate.
