Fresh Cranberry Salsa
Pretty, easy to make, and delicious, this salsa is perfect for any holiday party.

1/2 3 oz. fresh or frozen cranberries, thawed if frozen and patted dry cup diced fresh pineapple cup diced Granny Smith apple jalapeño, minced cup minced scallions cup each minced fresh cilantro and mint cup minced candied ginger Tbsp. honey
Salt and black pepper to taste Softened cream cheese and crackers or tortilla chips
Pulse cranberries, pineapple, apple, jalapeño, scallions, cilantro, and mint in a food processor until minced but still a little chunky; transfer to a bowl. Stir in candied ginger and honey; season salsa with salt and pepper. Chill salsa at least 1 hour or overnight. Serve salsa over cream cheese with crackers or with chips.
