LENTIL LESSON
Green | French du Puy lentils are smaller and rounder than brown lentils. Dark green with specks of black, they contain less starch than other lentils, so they’re firmer when cooked.
Red | Salmon-colored, these lentils are split, similar to yellow split peas. They cook quickly — in just 10-15 minutes, and don’t hold their shape well, making them ideal for soups.
Brown | The most common type, brown lentils are very inexpensive and the easiest variety to locate. Their tougher skins require 30-45 minutes cooking, yet still hold their shape.
Black | Black Beluga lentils get their name from their resemblance to Beluga caviar. These black beauties have caught the attention of chefs the world over.
