GLOVES OFF

I don't always have gloves available when I need to chop chiles. I've found that oiling my fingers creates a fool-proof barrier. I can cut, seed, dice, and mince hot peppers to my heart's content — as long as I occasionally dip my fingers in oil. When finished, a nice wash with hot, soapy water and I'm good to go.
