IN A BIND

While making meatballs the other day I realized

I was out of panko bread crumbs. Instead, I reached for my mother's stand-by for meatballs — steel cut oats. The meatballs held together beautifully, tasted great, not to mention the oats gave them a bump in protein and fiber!
