cup ex­tra-vir­gin olive oil cup red wine vine­gar Tbsp. tomato jam, page 49 Tbsp. grated yel­low onion tsp. smoked pa­prika tsp. fine sea salt

Com­bine oil, vine­gar, tomato jam, onion, pa­prika, and salt in a jar with a tight fit­ting lid; shake to com­bine.

Serve dress­ing on sal­ads, grain dishes, or even a garnish for puréed soups.
