Tomato Jam Vinaigrette

cup extra-virgin olive oil cup red wine vinegar Tbsp. tomato jam, page 49 Tbsp. grated yellow onion tsp. smoked paprika tsp. fine sea salt
Combine oil, vinegar, tomato jam, onion, paprika, and salt in a jar with a tight fitting lid; shake to combine.
Serve dressing on salads, grain dishes, or even a garnish for puréed soups.
