GRILLED HAM, APPLE & CHEDDAR SAMMIE

No need to run to the store to buy salted butter if you don’t already have it on hand. Simply use unsalted butter and top with a little salt.

Makes 4 sandwiches Total time: 30 minutes

Softened salted butter slices country Italian bread Tbsp. each Dijon mustard and honey

Tbsp. mayonnaise cups shredded sharp Cheddar (6 oz.) oz. thinly sliced ham Granny Smith apple, thinly sliced cup thinly sliced shallot

Spread butter on one side of each bread slice; place on a cutting board, buttered sides down.

Whisk together Dijon, honey, and mayonnaise in a bowl; spread on unbuttered sides of bread.

Divide half the Cheddar among four of the slices, followed by ham, apple, shallot, and remaining half of Cheddar; top with remaining bread slices, buttered sides up.

Cook sandwiches, two at a time, in a 12-inch nonstick skillet over medium-high heat, 2 minutes.

Cover skillet, reduce heat to medium, and cook sandwiches until undersides are golden and cheese begins to melt, 2–3 minutes.

Flip sandwiches and press with a spatula. Cover skillet (wipe condensati­on from lid with a towel, if necessary) and cook sandwiches until undersides are golden and cheese melts,

2–3 minutes. Flip sandwiches again; press with a spatula, cover, and cook 1 minute more. Transfer sandwiches to a cutting board; let rest 1–2 minutes before cutting in half. Repeat cooking procedure with remaining two sandwiches.
