Homemade Chicken Broth
Makes about 8 cups

medium yellow onions
(12 oz.), quartered medium carrots (6 oz.), chopped into 1-inch pieces ribs celery with leaves (6 oz.), chopped into 1-inch pieces
3–4 lb. bone-in chicken pieces (hindquarters or thighs)
8–9 cups cold water
1 oz. parsley sprigs
6 sprigs thyme
1 dried bay leaf
1 Tbsp. black peppercorns 2 2
Layer onions, carrots, celery, and chicken in a pot or Dutch oven. Add water to pot, making sure chicken is covered by 1 inch
(add more water if needed).
