PARBOILED & PRECOOKED:
Parboiled rice (such as Uncle Ben’s “converted”) is partially cooked while still in its husk. The process drives nutrients from the bran into the rice, increasing its nutritional value. Grains are yellowish and cook up firm and separate. It’s different than precooked, or “instant,” rice that’s been fully cooked then dried. Instant rice only needs to be rehydrated, but at the expense of flavor and texture.
