WARREN COUNTY HEALTH INSPECTIONS
The following are summaries of the state of Ohio standard inspection reports on file from the Warren County Combined Health District, from the weeks of July 4 to July 15. District information is available online at www. wcchd.com.
Butter Churn Cafe 57 S. Main St., Waynesville
Date of inspection: July 12
Violations: Corrected during inspection. TCS foods not being hot held at the proper temperature. Broccoli cheddar soup needs to be heated to temperature within the proper time.
Corrected during inspection. Hot- and cold-holding equipment thermometer was missing, located incorrectly or not easily readable. Missing thermometer in cheesecake display case. Gave PIC extra thermometers.
Cooking equipment or pan surfaces unclean. Panini grill is not clean and has buildup. Refrigerator in kitchen is dirty near floor and outside covering/panels.
No protective shielding on lights in storage room.
Comments: Food Safety Manager Certification: Herchelle C Shipman. Risk Class IV: cooling and reheating soups.

Date of inspection: July 13
Violations: Corrected during inspection. Fruit stored in the reach-in freezer in the back kitchen area did not have lids. Lids were provided for all containers in the freezer.
Corrected during inspection. Food equipment surfaces not cleaned at required frequency. The blenders were only being cleaned nightly, and the espresso machine steam wands were not consistently being sanitized after use. For any utensils or equipment that come into contact with TCS foods such as milk need to be washed, rinsed and sanitized at least every four hours. The blenders will now be cleaned between rushes, and the rag used to wipe the steam wands will now always be kept in sanitizer.
Corrected during inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked. Yogurts in the display case that were prepared the previous day were not properly date marked. To reduce the likelihood of using out-of-date food, date labels must be provided for all TCS food items kept for longer than 24 hours.
No written procedures for responding to vomiting or diarrheal events. A procedure will be provided for the facility.
Food employee(s) not wearing a hair restraint. Some of the employees were not either wearing ineffective hair restraints or not wearing hair restraints at all. Hats, visors, hairnets and beard covers are required when preparing food. All employees involved in the preparation of food or drinks are required to wear adequate hair restraint.
Corrected during inspection. Plastic food containers were stored with food-contact sides facing up. To reduce the likelihood of clean equipment being contaminated by dust or other contaminants, they must be stored either covered or food-contact side down.
