Dragon City 1601 N. Keowee St., Dayton

Date of inspection: Nov. 9

Violations: Unable to locate a verifiable employee health policy at the time of the inspection.

Using a large rolling trash receptacle at a table for a tub of processed raw chicken. Ensure that receptacle­s used for refuse are not used also for preparing foods to prevent possible contaminat­ion. Removed the plastic tub from the trash receptacle during the inspection and corrected.

Chicken pieces for fryers out at room temperatur­e at 55F during the inspection. Temperatur­e controlled for safety foods need to be cold held at 41F or below to prevent the growth of pathogens. Moved the foods to the walk in refrigerat­or to lower the temperatur­e during the inspection.

Gnats located near the three-compartmen­t sink and near the hot water heater. Ensure that pests are being controlled to limit or eliminate population­s.

Nov. 9

Violations: Dish machine components are not dispensing chlorine sanitizer into the unit for sufficient sanitizati­on of dishware and utensils. Per GM, dishware/utensils are manually cleaned (washed, rinsed, sanitized) at the three-compartmen­t sink prior to mechanical­ly washing in the dish machine.

Not using sanitizer test kit to verify proper concentrat­ion of chlorine sanitizer at the dish machine. Use the observed sanitizer test kit.

Front hand sink near registers still leaking continuous­ly. Repair.

Comments: Will check for corrected non-critical violations at the next routine inspection.

Replace missing toilet bowl cover in the women’s restroom.

7715 Hoke Road, Englewood

Date of inspection: Nov. 9

Violations: Observed chicken n noodles hot holding below 135F (122F). Staff reheated to above 165F. Continue to monitor food temperatur­es after microwavin­g.

Observed butter cups sitting on the counter (65F). PIC placed back in the cooler. If food items are going to be left out of refrigerat­ion, they will need a written procedure and be time marked.

Observed buildup on some of the pieces of equipment. Equipment shall be kept clean to sight/touch.

Comments: The dish machine is hot water sanitizing (163F utensil surface temp).

Wiping cloth buckets have a 400 ppm quat sanitizer.

Staff have thermomete­rs provided for monitoring food temperatur­es.

Violations: Unable to locate a probe thermomete­r during the inspection. Ensure a probe thermomete­r is available for checking food temperatur­es.

Ice machine has some buildup of debris. Clean and then on regular basis to prevent buildup. Some buildup of debris on the drink dispenser behind the bar.

Storing container of general purpose cleaner above the three-compartmen­t sink during the inspection. Ensure that hazardous chemicals are stored to prevent possible contaminat­ion of food-contact surfaces. Moved the chemical container to a proper storage area during the inspection.

Comments: Cold holding foods below 41F and frozen foods frozen during the inspection.

Hand sink stocked with soap, towels and hot water.

Hanging mop above the mop sink during the inspection.
