GREENE COUNTY HEALTH INSPECTION­S

The following are summaries of the state of Ohio standard inspection reports on file from the Greene County Combined Health District, from the week Oct. 31 to Nov. 4. District informatio­n is available online at https:// www.yourfoodsa­fety.com/ greene/.

El Toro

1375 N. Fairfield, Beavercree­k

Date of inspection: Nov. 2 Violations: Automatic dishwasher­s was reaching 120F during the wash cycle. Corrected.

Found ground beef stored over fish and whole cuts of beef. PIC corrected. Will provide handouts for storage order.

Found containers stacked while still wet. Allow all pans and utensils to air dry before stacking to prevent bacterial growth. PIC discussed this with the dishwasher.

Found single-use paper goods not stored at least 6 inches off of the floor in the upstairs storage room.

Chemicals were separated from single-use food storage containers upon re-inspection.

PIC stated a concrete pad is to be installed to place the garbage dumpster on and the pavement will be smoothed out.

Found metal framing at rear exit door rusted, allowing for possible harborage of pests. Repair frame. Found the ceiling in the upstairs storage area in disrepair. Repair to be smooth and free from contaminat­ion.

Comments: PIC was verbally informed of all violations noted during inspection. All signatures and initials on the inspection report have been digitally signed and agreed upon by both the PIC and the inspector. Inspection report will be emailed to PIC.

Chipotle Mexican Grill

1620 W. Park Square, Xenia

Date of inspection: Oct. 31

Violations: Found guacamole in the walk-in cooler temping at 48F. Discussed with PIC to chill the metal pans while prepping the guacamole for the shift to ensure that when the guacamole is placed into the prep pan, it will cool down properly. Guacamole was just prepped 30 minutes before inspection. Education was performed to ensure that temperatur­e reaches 41F in 4 hours to prevent microbial growth.

Found guacamole up at the to-go station at 45.9F. Since the guacamole was prepped at 11 a.m., PIC put on an ice bath to cool. Temperatur­e was checked before inspection was complete and temperatur­e was at 41F.

Found syrup bib boxes being stored on the ground. PIC corrected.

Found facility using the Chipotle bowls as a scoop for the chips.

Found to-go silverware that was not pre-wrapped not all facing the same direction. Discussed with PIC that the silverware must all be facing the same direction to prevent possible contaminat­ion of the food-contact surface when grabbed for customers.

Found the wash temperatur­e at 100F at time of inspection. Education was performed that the correct wash solution temperatur­e is at least 110F. PIC corrected.

Found a spill on the floor underneath the raw chicken.

Found the wall behind the dish machine to be dirty with food debris buildup.

Found the sneeze guard up at the front service counter to have buildup on the seal. Discussed with PIC if the seal could not be properly cleaned to remove buildup, it would need to be removed and resealed to ensure that it is smooth and easily cleanable.

Please have all violations not corrected during the inspection addressed or corrected prior to next standard inspection.

PIC stated that the ice machine was down, and maintenanc­e request had been sent in to repair the unit. Until unit is repaired, PIC stated that they are going to Kroger to pick up bags of ice.
