WARREN COUNTY HEALTH INSPECTIONS
The following are summaries of the state of Ohio standard inspection reports on file from the Warren County Combined Health District, from the weeks of Jan. 16 to Jan. 27. District information is available online at www. wcchd.com.
Gameday Grille & Patio
7576 N. State Route 28, Waynesville
Date of inspection: Jan. 23
Violations: Physical facilities not maintained in good repair. Tiles and baseboards missing throughout kitchen.
Floors, walls and/or ceilings not smooth and easily cleanable. Outside walk-ins have wood or non-cleanable flooring and walls/door.
Floors, walls and/or ceilings not smooth and easily cleanable. Ceiling and walls in beer walk-in are accumulating dust/black particles.
Floors under equipment and tables are accumulating buildup and debris.
Comments: All temperatures were in range. Good job!
Wendy’s 544 E. Main St., Lebanon
Date of inspection: Jan. 23
Violations: Corrected during inspection. Food equipment surfaces not cleaned at required frequency. Fry scoops were only being wiped down when covered in excess salt, but not properly cleaned every 4 hours when in use. To reduce the chance of contamination, ensure that all utensils that come into contact with TCS foods are washed, rinsed and sanitized every 4 hours at a minimum.
Corrected during inspection. Refrigerated, readyto-eat TCS foods not properly date marked. Older date labels were left on containers of lettuce in the walk-in cooler. To reduce the likelihood of using expired product, ensure that new date labels are provided for every item when prepared.
Equipment and utensils are not being air dried. Metal hotel pans were stacked and stored while still wet. To reduce the opportunity for mold growth, ensure that dishes and equipment are given adequate time to air dry before the dishes are stacked and put away.
Non-food contact surfaces of equipment are unclean. Date labels were not entirely removed from the containers during cleaning. To ensure that all dishes are completely cleaned and sanitized, remove stickers prior to or during the cleaning process.
Corrected during inspection. Waste receptacles not covered properly. The side doors of the dumpsters were left open. To eliminate possible pest harborage conditions, ensure that the dumpsters are closed after use.
Comments: Facility is risk level IV due to cooling and reheating for hot holding, as well as a tempering cheese variance.
La Comedia Dinner Theatre
765 W. Central Ave., Springboro
Date of inspection: Jan. 26
Violations: Facility not maintained clean. Racks in walk-in coolers had debris/ rust and other contaminants building up. Condenser unit vent covers are accumulating dust.
Facility not maintained clean. Ceiling, walls and floors had built-up debris and not clean to sight and touch. Areas of more concern are floors around dishwasher, wall behind fryer and ceiling tiles above food prep.
Physical facilities not maintained in good repair. Kitchen baseboards are missing throughout, and some holes/missing wall around corners near floor.
Light intensity less than 10 foot candles in required areas. One walk-in cooler did not provide sufficient lighting.
