Date of inspection: Feb. 23
Violations/comments: No written procedures for responding to vomiting or diarrheal events were observed. After informing person in charge, inspector gave PIC a paper copy of an example bodily fluid clean-up procedure. Corrected during inspection: Critical Repeat: Observed scoops without handle stored in dry goods throughout the facility. After informing PIC that scoops needed to have handles and handles need to be kept above the surface of the food, the scoops without handles were removed and PIC stated scoops with handles would be obtained. Critical Repeat: Observed wonton wrappers for crab Rangoon being prepped on a folding table that is not a food grade plastic. Wrappers were moved onto a cutting board that is a food grade contact surface. Grout mixer observed in facility. Ensure mixer is not used for any food or food prep. Removed mixer if it is not being used for facility maintenance.

Violations/comments: Corrected during inspection; Critical Repeat: Food not properly protected from contamination by separation, packaging and segregation. Observed raw eggs stored above ready-to-eat foods. Person in charge voluntarily removed eggs. Non-contact surfaces of equipment are unclean.
Observed racks in drink coolers unclean. Ensure cleaning frequency is increased to prevent buildup. Physical facilities not maintained in good repair. Observed multiple ceiling tiles are replaced.

Violations/comments: Critical: No person in charge present in food facility during inspection. Ensure at least one person is designated in charge per shift. Employees are informed in a verifiable manner of their responsibility to report information about their health. No sanitizer test kit available. Observed no chlorine test strips for bleach sanitizer for three bay sink. Nonfood contact surface(s) not cleaned at the required frequency. Observed shelves throughout the refrigeration units unclean with dust and mold buildup. Critical wastewater and sewage is conveyed through an unapproved system. Informed PIC mop wastewater must be dumped into mop system through an approved sanitary sewage system. Unnecessary or nonfunctional items and/or litter on premises. Observed clutter in room with three-bay sink. Ensure this clutter is removed.
