GREENE COUNTY HEALTH INSPECTIONS
The following are summaries of the state of Ohio standard inspection reports on file from the Greene County Combined Health District, from the week Jan. 16 to Jan. 20. District information is available online at https:// www.yourfoodsafety.com/ greene/.
Bob Evans Restaurants
3409 Seajay Drive, Beavercreek
Date of inspection: Jan. 17 Violations: Referred issue with grease vapor building in kitchen to local fire department for review.
Discussed time stamping of foods being held time-inlieu of temperature per code section. Time shall reflect the time the food must be discarded.
Discussed with PIC that delivery drivers are not documenting the temperature of TCS foods upon key drop delivery. Diana to forward the issue to management for assistance.
Found individual cups of butter stored at 55-58F in the tabletop cold holding at the serving line. PIC educated staff on not stocking foods above the fill line. PIC had the top layers removed to the walk-in for cooling. Corrected.
Found fully cooked sausage links removed from packaging not date marked. PIC corrected. Found several pans of ready-to-eat TCS foods stored past the use by date on the date mark sticker: turkey and beef lunch meat use by 1-14-23, hash browns and pork ham use by 1-16-23. Discussed with PIC to have staff go through prepared foods daily and discard those past the use by date. Corrected and discarded.
Found several Cambro pans not dried before stacking. PIC sent these back to the dish-washing area. Corrected.
PIC has on order a replacement gasket for the center reach-in cooler at the cold rail and a new ice bucket to replace the cracked one.
Found several cutting boards stained and with scores that could not be properly cleaned. PIC removed them from use and will order new cutting boards. Corrected.
Found the table under the flat grill was in need of more frequent cleaning. Found gaskets and door parts/handles to the upright refrigerator/freezer units at the grill line required more cleaning. Found the underside of the guard on the Hobart mixer in need of further cleaning.
Repairing. Noted grout between floor tile in the dish-washing area and at the grill line is in need of being re-grouted to prevent water and food debris from collecting. PIC shall obtain bids and have a completion date before the next inspection.
Found light shield covers in the storage room in need of cleaning to remove dead insects. Found vent covers over the mop sink area with dust accumulation. Found exterior to hood, ceiling and walls over fryer area and over ice machine with grease buildup and in need of cleaning. Found floor under grease fryer and grill in need of cleaning.
Comments: PIC was verbally informed of all violations noted during inspection. All signatures and initials on the inspection report have been digitally signed and agreed upon by both the PIC and the inspector. Inspection report will be emailed to PIC.
