Date of inspection: Aug. 24 Violations/comments: No written procedure for responding to vomiting or diarrheal events. Corrected during inspection: Food employees did not wash hands when required. Observed employee handling money in the drive thru, don gloves and make a sandwich. Discussed with employee that hands must be washed when changing tasks and donning new gloves. Employee washed their hands prior to donning new gloves. Repeat: Equipment components are not intact, tight or properly adjusted. Dish machine was observed in disrepair at time of inspection. Repeat: Facility not maintained clean. Observed dust on ceiling above prep areas.

Market St., Troy Date of inspection: July 12 Violations/comments: Critical: Person in charge did not ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage. Critical: Person in charge unable to demonstrate knowledge by having no critical violations. Critical: Person in charge unable to demonstrate knowledge of cleaning and sanitizing. During the inspection, it was stated that the machine that flattens the rice is cleaned at the end of the day. Discussion with person in charge that the machine must be cleaned every four hours. Observed the sushi is not taken to the walk in after preparation to be cooled. Discussed with person in charge that sushi must be cooled below 41 degrees F before being stocked in the retail cooler. Corrected during inspection, Critical Repeat: Food package(s) received in poor condition. Several dented cans around the rims and seals observed. Can voluntarily removed and marked out as damaged. Critical repeat: Equipment food contact surfaces or utensils unclean. The deli can opener was observed with a buildup of food debris. Can opener removed to dish area to be cleaned. Critical repeat: Improper cooling of
TCS food. Sushi in display case observed at 55 to 60 degrees F. TCS foods not being hot held at proper temperature. TCS foods not being cold held at proper temperature. Cutting boards in sushi area were observed discolored and no longer able to be effectively cleaned. Non-contact surfaces of equipment throughout the facility unclean.
