GREENE COUNTY HEALTH INSPECTION­S

The following are summaries of the state of Ohio standard inspection reports on file from the Greene County Combined Health District, from the week Aug. 21 to Aug. 25. District informatio­n is available online at www. yourfoodsa­fety.com/greene/.

Aug. 21

Found a dirty wiping cloth on shelf next to clean dishes. Wiping towels need to be properly stored in between uses to prevent possible contaminat­ion to clean surfaces. PIC corrected.

Found the reach in cooler and freezer door handles next to the fryers and grill area to be dirty with grease and food accumulati­on. Please clean these handles more frequently to prevent buildup and contaminat­ion to gloved employees. PIC corrected.

Found diced tomatoes, diced ham, sliced cheese, shredded cheeses and corn pico salsa all in the cold rail on cookline to be temping between 48-53 degrees F at time of inspection. PIC discarded all food.

Found chicken in the left side cooler on grill date marked for discard on

8-19 and 8-20 that were not discarded by time of inspection on 8-21. Please ensure that employees are discarding food by discard dates to prevent possible foodborne illness. PIC discarded all food.

Found pancake batter from breakfast service that was not time marked when it was pulled from the cooler in the morning. Please ensure that all time in lieu products are properly date and time marked when pulled from temperatur­e control. PIC discarded.

Found bulk sugar bin in back stock area that was not labeled with common name. PIC corrected.

Found baked bread in walk in cooler that was being actively cooled down and left unprotecte­d under the compressor box while in the cooling process. Please ensure that food is properly protected from contaminat­ion while in the cool down process. PIC corrected.

Found wet towels underneath cutting boards on the cookline prep tables. Please discontinu­e use of towels and replace with cutting boards with non slip sides or with cutting board mats. PIC corrected.

1. Found the sides of the fryers to be dirty and covered in grease and food accumulati­on. Please clean to remove buildup.

2. Found the hand sprayer at the scullery sink to be dirty. Please clean.

1. Found 1 bulb out in the prep area exhaust hood. Please replace burned out bulb.

2. Found the seam in the FRP board under the prep area exhaust hood to be melting off wall. Please replace melting wall strip with new piece and secure to wall.

3. Observed multiple areas in back prep area where floor tile grout is missing and eroding away. Please re-grout floor so that tiles are secure and not at risk of breaking and cracking.

4. Found the front compressor box in the walk in cooler to be dripping water onto floor. Please repair so that unit does not drip onto food or floor.

5. Found missing tiles under the dish machine and next to the mop sink. Please replace missing floor tiles. Repeat violation.

6. Found missing ceiling tiles in the front lobby and water dripping on to floor below. Please repair leak and replace missing ceiling tiles.

1. Found the wall behind the dish machine area to be dirty. Please clean.

2. Observed an odor coming from the dish area/mop sink area. Please ensure floor drains are being cleaned frequently to prevent odors from developing in floor drains.

3. Found the entire ledge under all the grills and cooktop equipment on grill line to be dirty with grease and food accumulati­on. Please clean to remove buildup.

4. Found the floor under and around the fryers to be dirty with grease and food accumulati­on. Please clean to remove buildup.

5. Found the right side faucet in the ladies restroom to be loose and falling off counter. Please repair.

Observed wet mops sitting in mop buckets and not hung up after use. Please hang up all mops after use to allow for air drying. PIC corrected.

Please have all violations corrected prior to next standard inspection.

PIC was verbally informed of all violations noted during inspection.

All signatures and initials on the inspection report have been digitally signed and agreed upon by both the PIC and the inspector. Inspection report will be emailed to PIC.

License posted has expired on 3-1-23. Please locate and display current food license. If current license can not be located, a duplicate license must be purchased at GCPH prior to next standard inspection.
