MONTGOMERY COUNTY HEALTH INSPECTION­S

IHOP

6930 Miller Lane, Dayton Date of inspection: Jan. 31 Violations: No time stamp observed on egg wash at the flat top grill. AGM labeled the time stamp on the product. Chlorine test kit not available. Obtain chlorine test kit to monitor concentrat­ion in the dish machine. Observed lipstick and debris on mugs stored as clean and plastic pan stored with clean utensils and equipment. Rack of mugs and plastic pan taken to the dish machine for cleaning. Observed water and build up underneath the prep top cooler. AGM cleaned out the cooler unit during the inspection. No lighting available in the chemical storage closet. Provide lighting in the storage closet. Observed two cans of Raids in the chemical storage room. GM voluntaril­y discarded the cans during the inspection. Comments: The Office of Environmen­tal Health at Public Health - Dayton & Montgomery County received a complaint on 01/29/2024 concerning storage order and alleged cross-contaminat­ion of raw chicken with batter utilized for French toast. No signs of cross-contaminat­ion were observed at the time of the inspection. Raw chicken was observed stored separate and away from ready-to-eat foods.

Airway Billiards Bar and Grill

2611 Needmore Road, Dayton Date of inspection: Feb. 2 Violations: PIC did not have a manager certificat­ion in food protection. Observed various containers stored in refrigerat­or without proper date labeling. Ensure that items are labeled with a 7 day use by date. PIC labeled items at the time of inspection. Observed cutting surface to be stained and heavily scored. Ensure the cutting surface is resurfaced or replaced to prevent contaminat­ion. Observed excessive food and grease built up on equipment (underneath flat top grill, sides of fryer and microwave) throughout the facility. Spoke to PIC to increase the frequency of cleaning to prevent build-up on the equipment. Observed stained and damaged ceiling tiles in the kitchen above the refrigerat­or. Ensure no leak is present. Informed PIC to repair or replace ceiling tiles. Observed build-up on hood filters above cook line. Clean and maintain. Comments: PIC stated the ceiling tiles have recently been damaged.

El Rancho Grande

7712 Hoke Road, Englewood Date of inspection: Feb. 1 Violations: Observed packages of meat thawing in buckets of cold water in kitchen. To prevent bacterial growth food should be thawed in cooler or under running water. PIC moved items to cooler. Observed ROP tilapia fillets thawing without slit in package. PIC slit packages to prevent bacterial growth. Observed pans of pork and salsa past date mark. PIC discarded items. Comments: Do not use bar dish machine until sanitizer bottle is replaced.
