The following are a sampling of food operation inspection reports from the Public Health–Dayton & Montgomery County from the week of Feb. 26 to March 1. Fuji Grill 8870 Kingsridge Drive, Dayton Date of inspection: Feb. 27 Violations: This operation has no written procedure for bodily fluid clean up. Hot TCS foods on the buffet bar (chicken wings, sweet and sour chicken, chicken and broccoli) found hot holding between 117F and 126F. Food was discarded. No prep or discard dates provided on prepared TCS foods. No time stamps provided for sushi being held at room temperatur­e. Sushi can only be held for 4 hrs. Old food build up observed under and or behind coolers and cooking equipment. Comments: No prep or discard dates provided on prepared TCS foods not used in 24hrs. No time stamps provided on sushi. Las Piramides 6290 Chambersbu­rg Road, Huber Heights Date of inspection: Feb. 28 Violations: Observed child in play pen in kitchen at time of inspection. Discussion with employee and PIC regarding restrictin­g persons in kitchen being removed and placed in dining area. Observed eggs above RTE items in walk in cooler. Observed raw chicken and beef in pans above RTE items on another rack in walk in cooler. Observed uncovered items in chest freezer. Observed dry stock items without covers and not in use. Observed 2 pans of cooked rice and a pan of cooked meat with vegetables with covers on cart next to stove below hot holding temperatur­es. PIC states this item was cooked between 10:20 am and 10:30 am and was placed there to cool before putting in walk in. Items discarded at time of inspection. Discussion with PIC & cook regarding cooling procedure during inspection. Observed several sauces and pans with cooked meat in walk in cooler without dates. Items were stated to be made yesterday. Items dated at time of inspection. Observed severe ice build up on ceiling of walk in freezer. Kung Fu Noodle 2801 S. Dixie Drive, Suite 3, Kettering Date of inspection: Feb. 26 Violations: Observed raw meats to be stored above produce. PIC had all produce moved to one shelf and raw meats moved to another. Observed facility to be utilizing time in lieu for dumplings without providing a time stamp. Spoke to PIC about ensuring any items that are not being held hot or cold receive a time stamp. PIC added time stamps to dumplings. Observed hand sink to have cups inside. Hands sinks are to be clean, clear from obstructio­n and readily accessible at all times. PIC removed cups from sink.
